I am not a good baker, but I develop an interest in wine-related baking especially when the meal seems delicious. This was the case of Canelé, a delicious French Pastry famous for a custardy centre, contrasting decadent, mahogany and burnt sugar crust. The Canelé is generally flavored with vanilla and rum. They are typically baked in a Canelé mold for them to have a cylindrical shape and a hallmark striated. Canelé originated from Bordeaux a place known by many lovers because of the presence of red wines. In the production of this wine, there is a process known as fining where the egg white is used, leaving the Yolk behind. Canelé was meant to utilize the yolks. When I took my first visit to Bordeaux, that is when I realized that canelé was popular.
However, if you are not a good baker like me, you might not like the recipe at first glance. This was the case for me. However, I love being challenged when it comes to French pastries. Some of the ingredients you need to make canelé are eggs, butter, sugar, flour, and vanilla.
However, some of the additional things you need for this recipe are a Canelé Mold and time. One is also advised to do this project on a weekend since it requires some time, and the batter needs to rest overnight.
Moreover, the canele usually requires to be babysitted during the baking process. The mold needs to be well battered and preheated before one can add batter which helps in the caramelization process. One also needs to drop the temperature of the oven after the first thirty minutes. You also have to be careful when flipping the candles at the final stage to make sure you don’t lose your fingers.
Moreover, candles can be paired with wine known as Sauternes. The two originate from the same place. If they grow together, they can go together. This is indeed a great recipe worth trying. You may also tweak it and come up with your own version of a real treat.
